Si and Dave served up a tasty Mangalitza pork and white pudding Wellington with apple stuffing and caramelized onions on The Hairy Bikers Go North.
The ingredients are: 40g butter, 3 large onions, thinly sliced, 75ml dry cider, small bunch fresh sage, leaves only (about 15 leaves required), 1 pork fillet, approx. 500g, 75g white pudding, crumbled, ½ small eating apple, peeled and diced, 15g fresh breadcrumbs, 1 free-range egg, beaten, 1 tbsp olive oil, 6–8 slices prosciutto or Parma ham, 1 block (400–500g) puff pastry. salt and freshly ground black pepper.
For the gravy: 100ml dry cider, 300ml chicken or pork stock, few fresh sage leaves, finely chopped (optional), 1 tbsp plain flour, plus extra for dusting and 1 tbsp softened butter.
