Tony Singh served up tasty samosas with tamarind and coriander chutney, chaat masala and spiced yoghurt on Saturday Kitchen.
The ingredients For the samosa filling are: 500g floury potatoes, such as Maris Piper, ½ tsp turmeric, 1 tsp chilli fowder, 3 tsp garam masala, 200g frozen petit pois, 1 red onion, finely chopped, 2 garlic cloves, crushed, 8cm ginger, peeled and finely chopped, 3 green finger chillies, finely chopped (with seeds), 30g fresh coriander, 3 tsp cumin seeds, 1 lime, juice only and salt.
For the samosa dough: 550g plain flour, plus extra for dusting, ½ tsp baking powder, 2 tsp ajwain seeds, 120ml cold pressed rapeseed oil, plus extra for greasing and brushing.
