Gok Wan served up tasty Thai corn cakes with pickled cucumber, daikon (white radish), red onions and chilli on Gok Wan’s Easy Asian.
The ingredients for the pickling liquid are: white wine vinegar, 2 tsp sugar and a pinch of salt.
For the Thai paste: lemongrass, ginger, garlic, shallot and kaffir lime leaves, fish sauce, olive oil.
For the corn cakes: tin of sweet corn, 1 tbsp self raising flour, Thai paste and oil for frying.
