John Whaite served up a tasty aubergine with courgette and halloumi bake on Steph’s Packed Lunch.
The ingredients are: 3 tbsp olive oil, 1 large onion, finely sliced, 3 garlic cloves, minced, 400g fresh vine tomatoes, roughly chopped, 175ml dry white wine, 200ml strong vegetable stock, Small handful of fresh oregano leaves, roughly chopped, 2 medium aubergines, cut into 2cm dice, 1 large courgette, cut into 2cm dice, 100g pitted black olives, roughly chopped, 250g block halloumi, finely sliced, Sea salt flakes and coarsely ground black pepper.
