Raymond Blanc served up moules three-ways including Thai mussels with chillies, coriander and ginger on Simply Raymond Blanc.

The ingredients are: 1 banana shallot or ½ onion, 1 lemongrass, 2cm root ginger, 2 or 3 red chillies, to your taste, 3 tbsp refined olive oil, 1.8kg fresh mussels, 150ml dry white wine, 200ml coconut milk, ½ bunch coriander, roughly chopped and 4 pinches sea salt.
