James Martin visits the Isle of White to discover why tomatoes grown on the sunny island are giving those from Italy a run for their money. He then serves up a barbeque stuffed tomato dish that looks a treat for any dinner party.
James says: “Beef tomatoes stuffed with mince and served with a rich tomato sauce is a great way to use up a glut of tomatoes.”
The ingredients used for the dish are:
5 beef tomatoes, 1 shallot, finely chopped, 500g lamb mince, 25g fresh breadcrumbs, 300g button mushrooms, 3 tbsp chopped fresh tarragon, salt and black pepper, 25ml olive oil.
And for the sauce:
8 medium tomatoes, 50ml rapeseed oil and 2-3 garlic cloves, finely chopped.
