Ainsley Harriott served up a delicious orange mocha mousse with cardamom on Ainsley’s Food We Love.
The ingredients are: 90 ml very strong cold black coffee, 3 cardamom pods, husks discarded and seeds finely ground, zest of 1 orange and 1 tbsp juice, 180g good quality dark chocolate (min 70% cocoa solids), plus extra for gratin, 2 eggs, separated, 150ml double cream, plus extra to serve and 2 tbsp caster sugar.
