Francesco Mazzei roasted pineapple with mascarpone cream on James Martin’s Saturday Morning

Francesco Mazzei served to up roasted caramelised pineapple with mascarpone cream on James Martin’s Saturday Morning.

The ingredients are: 1 pineapple, 40g caster sugar, 40g muscovado sugar, 20g honey, 50ml Maraschino, 1 vanilla pod, 1 cinnamon quill, 2 star anise and 15g butter.

For the cream: 150g mascarpone, 150ml whipping cream, 80g sugar and ½ vanilla pod.
