Mutton is on the menu on today’s episode of James Martin: Home Comforts. The master chef serves up a mutton hotpot with heritage carrots for a tasty winter warmer using mutton supplied by local sheep farmers Tess and Steve Gould.
James says: “Mutton might not be as popular as it once was, but it’s the traditional – and most flavourful – meat to use in hotpots.”
James makes his hotpot with a leg of mutton cut in large pieces dusted with flour then fried in suet from the sheep to get incredible flavours.
