Lisa Faulkner and John Torode served up tasty Coronation chicken salad starters with poppadoms on John and Lisa’s Weekend Kitchen.
The ingredients are: 30g butter, 1 medium onion, finely chopped, 1-2 teaspoons curry powder, 1 teaspoon garam masala, 1 stick cinnamon, 85g dried apricots, chopped, 2 tablespoons tomato puree, 500ml chicken stock, Juice and zest of 1 lime, 250ml double cream, 250ml mayonnaise, Seasoning, Handful of coriander, roughly chopped, 25g toasted flaked almonds and 1 roast chicken, skin and bones removed, shredded.
To serve: Gem lettuce cups, Mini poppadoms and Pin wheel wraps.
