Gino served up tasty piadinas with vegetables and pesto mayonnaise together with a ham and cheese version on Gino’s Italian Coastal Escape.
The ingredients are: large bunch of basil, 2 cloves of garlic, 60g pine nuts, 100g pecorino, grated, extra Virgin Olive oil, 2 piadina breads, 3-4 tbsp mayonnaise, 1 small bunch of asparagus, trimmed and griddled, ½ courgette, sliced length-ways, trimmed and griddled, 2 slices of griddled aubergine, Slices of local ham – mortadella, parma or breasola, 1 ball of scamorza or smoked mozzarella and rocket to serve.
