Paul Ainsworth served up a tasty engagement roast chicken on Royal Recipes with Michael Buerk.
The ingredients are: 2.5kg free-range whole chicken, giblets removed, 150g butter, softened, 75g day-old brioche crumbs, large bunch lemon thyme, 2 bulbs garlic, halved, 1 lemon, halved, 100g butter, melted, for basting, 750ml good-quality chicken stock, 2 tsp plain flour, sea salt and black pepper.
