James Martin served up a tasty angry lobster with a black bean and chilli sauce on James Martin’s Saturday Morning.
The ingredients are: 3 lobsters, cooked, 10cm piece of ginger, peeled and diced, 4 garlic cloves, peeled and sliced, 3 shallots, peeled and sliced, 50g caster sugar, 300g black beans, cooked (tinned is fine), 75ml sweet chilli sauce, 50ml Shoaxing wine, 150ml ketchup, 1 bunch spring onions, sliced, 50ml soy sauce, 1tsp Szechuan peppercorns, crushed, 100ml Hoisin sauce, 1 large bunch mint, chopped, 1 large bunch coriander, chopped and Vegetable oil for frying.
