Nigel Barden serves up tasty baked cod with a brown shrimp crust on Radio 2 Drivetime with Mary Portas.
The ingredients are: 800g cod fillet, or 4 x 200g fillets (skinned and pin-boned), 20 spears asparagus and 1kg new potatoes.
For the Crust: 60g butter, 50g onion diced small (retain trimmings/off cuts), 1 bay leaf, 1/2 lemon- zest and juice, 20g parsley, 20g creamed horseradish, 100g brown shrimp and 50g Panko breadcrumbs.
For the Bechamel: 20g unsalted butter, 20g plain flour, 250ml milk, 1 bay leaf, onion trimmings, 2 tbsp capers and 1/2 lemon juice.
