Mary Berry served up a tasty leek and Stilton quiche with savoury custard on Classic Marry Berry.
The ingredients for the shortcrust pastry: 225g plain flour, 125g butter, 1 free-range egg and 1 tbsp water.
For the filling: 1 tbsp olive oil, 2 leeks, thinly sliced, 2 sticks celery, thinly sliced, 4 free-range eggs, 450ml double cream, 150g Stilton cheese, coarsely grated, 2 tbsp chopped parsley, salt and freshly ground black pepper.

I thought Mary said use strong flour for her pastry, for the leek and Stilton quiche,
Was that correct or did I mis-hear??
