Simon Rimmer served up a delicious Key Lime Pie with a passion fruit sauce on today’s episode of Sunday Brunch.
For the base: 350g crushed digestive biscuits and 175g melted butter.
For the filling: 100g caster sugar, 6 eggs, separated, juice and zest 5 limes and 500g condensed milk.
For the sauce: 150g caster sugar, 150ml water and Pulp of 12 passion fruit.
