Stephen Terry served up a tasty chicken with butternut squash, savoury granola, broccoli and feta salad on James Martin’s Saturday Morning.
The ingredients are: 1 butternut squash, 450/500g purple sprouting broccoli, 3 heads of chicory or endive, 150g (approx) washed watercress, 300g feta, diced, 3 free-range chicken breasts (skinless & boneless), Juice of one lemon & approx 100ml extra virgin olive oil for dressing and
Rape seed oil for cooking.
For the savoury granola: 50g jumbo oats, 15g pine nuts, 15g pumpkin seeds, 20g pecans, 25ml rapeseed oil, 50ml maple syrup, 2g crushed sea salt, 3g ground turmeric, 3g sweet smoked paprika, 2g mild chilli powder and 3g ras el hanout.
