The Bikers served up tasty albondigas (Moorish pork meatballs) with patatas bravas (potatoes in spicy sauce) on the Hairy Bikers’ Mediterranean Adventure.
The ingredients for the meatballs are: 600g lamb or pork mince, 2 garlic cloves, crushed, 1 tbsp ground coriander, 2 tbsp ground cumin, 1 tsp sweet paprika, ½ tsp ground cinnamon, 1 tsp ground cardamom, small bunch parsley, finely chopped, 1 lemon, zest only, 100g fresh breadcrumbs, 50ml double cream, 1 free-range egg, 3-4 tbsp olive oil, for frying, salt and freshly ground black pepper.
For the tomato sauce: 2 tbsp olive oil, 1 onion, finely chopped, 2 garlic cloves, finely chopped, ½ tsp ground cinnamon, ½ tsp cayenne pepper, ½ tsp ground cumin, ½ tsp ground turmeric, 2 bay leaves, 400g tin tomatoes, 1 tsp honey, 100ml plain yoghurt (optional) and 3 tbsp finely chopped parsley leaves, to serve.
For the patatas bravas: 800g floury potatoes, peeled and cut int 3–4cm chunks, 200ml olive oil, 2 garlic cloves, finely chopped, 1 tbsp sherry vinegar, ½ tsp sugar or honey, 1 tbsp sweet paprika, 1 tsp hot paprika and 2 tbsp finely chopped parsley, to garnish (optional).
