Dave and Simon served up a delicious Italian torta menjar blanc ( lemon and cinnamon custard pie) on The Hairy Bikers’ Mediterranean Adventure.
The ingredients for the pastry: 350g plain flour, 150g icing sugar, 175g/6oz butter, chilled and cut into cubes, 1 unwaxed lemon, finely grated zest only, 2 free-range eggs, beaten and salt.
For the filling: 1 litre whole milk, 1 vanilla pod, split lengthways, 2 sticks cinnamon, 1 unwaxed lemon, finely grated zest only, 6 free-range egg yolks, 150g caster sugar, 100g cornflour, egg white, for brushing and icing sugar, to serve.
