Nigel Barden Boxing Day Pie recipe on Radio 2 Drivetime

Nigel Barden served up a tasty Boxing Day pie with leftover turkey using a recipe by Lucy Young on Radio 2 Drivetime with Simon Mayo.

The ingredients are: 40g butter (Nigel used unsalted), 1 large onion, chopped, 40g plain flour, 150ml white wine, 450ml milk, 1 tbsp grain mustard, 250g chestnut or closed cup mushrooms, thickly sliced, 2 tbsp fresh flat-leaf parsley, chopped, 450g cooked turkey, shredded in thick strips, salt and pepper, 900g potatoes (peeled and cut) and 75g cheddar cheese (grated).
