Jamie Oliver served up a tasty roasted game bird pie with green vegetables on Jamie and Jimmy’s Friday Night Feast.
The ingredients are: 1 x 1.4 kg whole free-range chicken, 1 x mallard, 1 x pheasant, 1 x grouse, 1 x partridge, 1 x quail, ½ a bunch of fresh thyme , (15g), ½ a bunch of fresh rosemary , (15g), 2 fresh bay leaves, 1 tablespoon juniper berries, olive oil, 1 red onion, 3 carrots, 2 sticks of celery, 2 medium leeks, 4 rashers of higher-welfare smoked streaky bacon, 2 Maris Piper potatoes, 1 litre organic chicken stock, 2 tablespoons plain flour and 500 ml dry cider.
For the pastry: 600 g plain flour , plus extra for dusting, 150 g suet, 150 g unsalted butter , (cold) and 2 large free-range eggs.
For the greens: 1 kg mixed seasonal greens , such as chard, kale, cavolo nero spinach, sprouting broccoli, 25 g unsalted butter, 1 teaspoon English mustard and ¼ teaspoon white pepper.
