Jerk pork is Usain Bolt’s favourite meal and on Jamie and Jimmy’s Friday Night Feast, Jamie and Usain cooks this delightful dish inspired by Usain’s Aunt Lilly.
The most important element of the dish is the jerk sauce. To make their jerk sauce, Jamie and Usain roughly chops 8 spring onions and puts them in a liquidiser along with 8 cloves of garlic, peeled, 2 Scotch bonnet chillies, deseeded, ½ a bunch of fresh thyme, 3 fresh bay leaves, 1 teaspoon ground cloves, 1 teaspoon ground allspice, 1 teaspoon ground nutmeg, 6 tablespoons white wine vinegar and 1 tablespoon runny honey and a splash of rum.
The ingredients are blitz to form a smooth sauce.
In a large bowl, Jamie combines half the jerk sauce with the pork belly, then cover and place in the fridge to marinate for at least 2 hours before cooking.
