Mark Hamill roast beef with Yorkshire puddings and horseradish sauce recipe

Mark Hamill and Jamie Olive served up roast beef with Yorkshire puddings, gravy and horseradish sauce on Jamie and Jimmy’s Friday Night Feast.

The ingredients for the beef: 2 kg whole dry-aged sirloin of beef, olive oil, 40 g black peppercorns and 3 sprigs of fresh rosemary.

For the Yorkshire pudding are: 4 large free-range eggs, 150 g plain flour, 175 ml whole milk and 50 g beef dripping.

For the gravy: 2 kg beef bones , with bone marrow, 2 large leeks, 2 red onions, 2 heaped tablespoons plain flour, 100 ml red wine and 100 ml port.

For the horseradish sauce: 6 heaped tablespoons half-fat crème fraîche, 3 cm piece of fresh horseradish, extra virgin olive oil and 1 tablespoon white wine vinegar.
