James Martin served up a stuffed lamb cutlets with cheese, Parma ham and salad using Antonio Carluccio’s recipe on Saturday Mornings with James Martin.
The ingredients are: 16 lamb cutlets, salt and pepper, 75g Fontana cheese, cut into slices, 16 large fresh sage leaves, 16 slices Parma ham, 2 large eggs, 300g panko breadcrumbs, 100ml olive oil for shallow frying and 100g butter for shallow frying.
For the salad: 250g mixed salad leaves, 3 spring onions, sliced, 1 small bunch mint, chopped, 2 sticks celery, sliced, 50ml extra virgin olive oil, 25ml white wine vinegar, 1 tsp water and Salt and pepper.
