Anna Haugh served up (tarte owte of lente) cheese tart with caraway seeds and mustard vinaigrette on Royal Recipes with Michael Buerk. The cheese tart is so named as it includes all the things that you are not supposed to eat during lent – cheese, eggs and cream – during the reign of King Henry Viii.
The ingredients are: 500g shortcrust pastry, plain flour, for dusting, 200g Cheshire cheese, grated, 225ml double cream, 2 free-range eggs, beaten, 100g cream cheese, sea salt and black pepper.
For the glaze: 1 free-range egg yolk and 1 tsp milk.
