Simon Rimmer served up a banana and peanut butter cake with mango icing on Sunday Brunch.
The ingredients are: 125g butter, 175g soft light brown sugar, 1 tsp vanilla pod paste, 2 eggs, 2 mashed over ripe bananas, 150g crunchy peanut butter, 225g flour, 1 tsp baking powder, 1 tsp bicarb, 1 tsp cinnamon and 1 tsp maple syrup.
For the frosting: 350g cream cheese, 75g finely chopped mango, 550g icing sugar and 1 tsp vanilla pod paste.
To serve: fruit and ice cream.
