Paul Ainsworth Portland pudding recipe on Royal Recipes

Paul Ainsworth served up a Portland pudding with a orange sauce on Royal Recipes with Michael Buerk. The dessert is famed for being a favourite of King George III when he stayed nearby in Weymouth.

The ingredients are: 150g butter, softened, 150g caster sugar, 4 free-range eggs, separated, 150g self-raising flour, 25g candied peel, finely shredded, 2 tsp milk and pinch fine sea salt.

For the sauce: 150g caster sugar, 150g lightly salted butter, 150ml fresh orange juice, 75ml double cream, 2 oranges, finely grated zest, plus extra to serve and 50ml orange liqueur, such as Grand Marnier.
