Ottolenghi’s perfect pavlova with plums recipe on This Morning

Yotam Ottolenghi served up the perfect rolled pavlova with plums and almonds on This Morning.

The ingredients for the meringue base are: 250g egg whites (from 6 large eggs, or you might want to buy egg whites in a carton) at room temperature, 375g caster sugar, 2 tsp vanilla extract, 2 tsp white wine vinegar and 2 tsp cornflour.

For the filling: 400ml double cream, 1 tsp vanilla extract, 30g icing sugar, sifted, plus extra to dust, 5 large, ripe plums, washed but unpeeled, stone removed and cut into 5mm wide segments (600g), 300g fresh blackberries and 60g toasted flaked almonds.
