Phil Vickery served up courgette fritters with a spicy peanut sauce and sesame salad on This Morning.
The ingredients for the Fritters: 3 tbsp self raising flour, pinch or two of turmeric, 1 medium egg, beaten, 50-75ml milk, approximately, salt and freshly ground black pepper, 2 medium courgettes, grated roughly or cut into very thin strips and vegetable oil.
For the sauce: 2 tbsp vegetable oil, 1 small onion, peeled and chopped, 2 cloves of garlic, peeled an chopped finely, I x 340g jar of ‘crunchy peanut butter, 1 tbsp maple syrup, A couple of dashes of Tabasco sauce, 4 tbsp chopped coriander, 2 tbsp malt vinegar and Cold water.
For the salad: Juice of 3 large limes, 150g dried shrimp, 200g French beans, cut into long thin slivers, 200g young runner beans, cut into long thin slivers and 1 medium Kohl Rabi, peeled then cut into fine matchsticks.
For the dressing: 3 tbsp tamarind paste, 2 tbsp Thai fish sauce, 2 cloves of garlic finely chopped, 2 tsp heaped finely chopped red chilli, 75mls vegetable oil, 8 paper thin slices of lemon, cut into quarters, 4 tbsp roughly chopped Thai basil, 2 tbsp roughly chopped mint, Salt and finely ground pepper, A pinch of sugar and 10-15 cherry plum tomatoes, halved.
