Tom Kerridge shows to make the humble carrot extra special this Christmas with this simple recipe on Tom Kerridge Cooks Christmas on the BBC.
To prepare his carrots, Tom peels them then uses a clean scourer to smooth the carrots and removed any peel marks.
In a pan, he combined 400ml of water, 250g butter, 150g sugar butter, salt and star anise. He brought the pan to the boil, then reduces the heat to a gentle simmer and adds his 9 carrots.
Tom cooks the pot until the carrots are tender (approximately 45 minutes) and the volume of liquid has reduced by half.
He serve the carrots as a side dish with the reduced cooking liquid poured over.
