Jane Beedle served up a no bake lemon meringue cheesecake on today’s episode of Lorraine.
The ingredients for the biscuit base are: 200g stem ginger cookies or oat based biscuits and 100g salted butter, melted.
For the filling: 300g full fat cream cheese, 200g light cream cheese, 397g can of condensed milk, 3 large lemons, zest and juice, 1tsp vanilla extract and 320g good quality lemon curd (home-made is great if you have it).
For the meringue topping: 3 egg whites, large, 165g caster sugar, Pinch of cream of tartar, or a squeeze of lemon juice and ½ tsp vanilla extract.
