The award winning Michelin 2 starred Chef, who is proprietor-chef of Le Champignon Sauvage in Cheltenham, has been named by the 2014 edition of the Good Food Guide, as Chef of the Year.
David has run the kitchen of his restaurant for 26 years, and has never missed a lunch or dinner service in that time.
Today he demonstrates how to give a Christmas pudding a French makeover by mixing it with pastry cream to fill a tart case, then topped with almond-flavoured crumble.
