Dean Edwards gammon with pineapple recipe on Lorraine

Dean Edwards served up gammon with pineapple and sweet potatoes with a twist on today’s episode of Lorraine.

the ingredients are: Half a pineapple, peeled and diced small, 1 red onion, very finely diced, Half a deseeded red chilli, very finely diced, 3 tbsp fresh coriander, chopped, Juice of one lime, 30ml olive oil and 4 small unsmoked gammon steaks.

For the fries: 2 large sweet potatoes, peeled and 1 tbsp olive oil.

To serve: 4 free range eggs, Oil for frying and Fresh coriander for garnish.
