Simon Rimmer served up beef and mango Jamaican stew on today’s episode of Sunday Brunch.
The ingredients are: 450g large cubed chuck steak, 1 teaspoon fresh grated nutmeg, 25g curry powder, 50ml light soy sauce, 300ml beef stock, oil to fry, 1 onion, thinly sliced, 1 green pepper, thinly sliced, 1 clove garlic, crushed, 4 tomatoes, chopped, 1 baking potato, peeled and cut into big chunks, 25g tomato puree, 50ml rum, 2 mangoes, not too ripe, 15g thyme and long grain rice to serve.
