Nigel visited Norway for inspiration for his delicious Marzipan cake on Nigel’s 12 Tastes Of Christmas.
Nigel make is marzipan cake by slicing up 180g of butter and 180g of caster sugar. He beats the sugar and butter together in a bowl with an electric mixer until it is light and fluffy.
While the butter and sugar are mixing, he lightly beats a couple of eggs and add them to the mixer bowl once the contents has become pale and fluffy.
He adds 80g of plain flour followed by 150g of ground almonds and adds 150g of marzipan by tearing it into nuggets before dropping into the bowl.
He cut out squares of baking parchment that covers the holes of a bun tray and put a spoonful of the mixture on each square.
Finally he scatter 3-4 berries over each one before placing in the oven at 180C for 30 minutes.
Nigel the sprinkles the buns with a little icing sugar to finish.
