Ainsley’s Caribbean pancakes recipe on Lorraine

Ainsley Harriott served up Caribbean pancakes for Pancake Day on today’s episode Lorraine.

The ingredients for the classic pancake battera are: 200g plain Flour, 2 medium eggs lightly beaten, 400ml whole Milk, 25g melted butter, Pinch salt, 1 tbsp caster sugar and Vegetable oil for frying.

For the filling: 3 apples, peeled, cored and cut into chunks, 25g butter, 50g Sultanas, 25g desiccated coconut and a splash of rum (optional) or squeeze of lemon juice.

For the chocolate sauce: 50ml milk, 50ml double cream and 125g dark chocolate, grated (60% cocoa solids).
