Paul Ainsworth served up a lemon cheesecake with lemon curd on Royal Recipes with Michael Buerk.
Paul’s cheesecake dessert was inspired by Royal cook Mildred Nicholls who made lemon tartlets with lemon curd for the Royal family.
The ingredients for the base consist of: ginger biscuits and butter.
For the lemon curd: 2 egg yolks added to 4 eggs, sugar, lemon zest, juice of two lemons and corn flour.
