Simon Rimmer served up Brooklyn blackout cake on today’s episode of Sunday Brunch.
The ingredients are: 150g melted butter, 100ml veg oil, 150ml buttermilk, 100ml espresso, 2 eggs, 250g soft dark brown sugar, 250g flour, 1 tsp bicarb, 2tsp baking powder, 50g cocoa powder and serve with fruit and cream and grated chocolate.
For the custard: 250g sugar, 500ml milk, 150g chocolate, 50g corn flour, 15ml strong espresso and 10ml pure vanilla extract.
