This dessert was Michel’s favourite as a child and is know in france as oeufs à la neige, floating islands. The smell of caramel cooking always brings back Michel’s childhood memories.
A floating island is a French dessert, consisting of meringue floating on crème anglaise. The meringues are prepared from whipped egg whites, sugar and vanilla extract then quickly poached.
