Nigel Barden served up a tasty Scandinavian Juniper Cured Salmon dish on Radio 2 Drivetime.
The ingredients are: 1 tbsp coriander seeds, 1 tbsp black peppercorns, 50g juniper berries, 150g flaky sea salt, 200g caster sugar, 1 fillet salmon about 1.6kg and skin on rye bread.
