James Tanner served up a tasty Tuscan vegetable and pasta stew on today’s episode of Lorraine.
The ingredients are: 2 tbsp olive oil, 1 potato, diced, 1 large carrot, diced, 1 small onion, diced, 2 sticks celery, diced, 1 clove garlic, minced, 1 sprig rosemary, leaves picked and chopped, 100g orzo pasta, 1 litre vegetable stock, 1 can borlotti beans, or beans of your choice, 2 large leaves of cabbage or handful cavolo nero or kale, shredded and chopped, Salt and black pepper.
For the croutons: 1 ciabatta, torn into chunks, Olive oil, for drizzling and 5 tbsp freshly grated Parmesan cheese.
