Simon Rimmer served up a tasty pumpkin tikka on today’s episode of Sunday Brunch.
The ingredients are: 800g pumpkin/squash, in large wedges.
For the marinade: 200ml natural yoghurt, Juice 1 lime, 2 cloves crushed garlic, 25mm piece ginger, finely chopped, 15g ground coriander, 5g ground cumin, 5g ground garam masala, 5g paprika, Salt and Juice 1 lemon mixed with 100g melted butter.
For the salad: 1 finely diced red onion, 4 deseeded toms, finely diced, 1 finely chopped red chilli, 100g mango chutney, Juice and zest 1 lemon, Handful chopped coriander and mint.
