Simon Rimmer served up tasty vegan cauliflower tacos on today’s episode of Sunday Brunch.
The ingredients are: 8 x 6” soft corn tortillas, 1 red onion, sliced, Juice and zest 1 orange, 1 head cauliflower, cut into florets, Splash of Olive oil, 7g each of smoked paprika, cayenne, ground coriander, 1 sliced avocado, 2 diced, deseeded toms, 1 head of little gem lettuce, finely chopped, 200g veganaise (vegan mayonnaise), mixed with 50ml hot sauce, 30 jalapenos (pickled in a jar) and Garnish with lime and coriander.
