Simon Rimmer made a delicious Tennessee jam cake served with blackberries and cream on today’s episode of Sunday Brunch.
The ingredients are: 225g butter, 200g sugar, 250g blackberry jam, 4 eggs, 325g flour, 5g baking powder, 5g nutmeg, 5g ground cinnamon, 3g ground cloves, Pinch of salt, 300g buttermilk and 200g chopped pecans.
For the frosting: 125g butter, 225g soft dark brown sugar, 65ml milk, 300g icing sugar and 50ml bourbon.
