Paul Hollywood Pies and Puds: Tom Kerridge Bread and Butter pudding

Chef Tom Kerridge visits Paul in his kitchen to show the master baker his version of a British favourite, the humble bread and butter pudding.

Tom Kerridge is a Michelin star chef who started out in television as a child actor in various television series. At the age of eighteen he decided to attend culinary school and has never looked back.

For his bread and butter putting Tom used is mother’s recipe and gave it a modern twist. He starts by buttering ordinary sliced bread which he later cuts into triangles after sprinkling with nutmegs.

He then makes his custard with eight eggs yolks, caster sugar and double cream. He pours the some of the custard in a baking tray then sprinkled with raisins. He then adds his first layer of bread, followed by more custard and raisins and then repeated the process.

After leaving it to set for 20 minutes, he bakes the pudding in the oven for 180 degrees for 25-30 minutes until the custard is set. It is then removed from the oven and sprinkled with demerara sugar. He then gave the pudding the blow torch treatment to finish.
