Have fun making your own chapatis.&#8221;<\/p>\n<p>The ingredients for the curry powder: 2 tbsp vegetable oil, 2 tbsp coriander seeds, 2 tbsp fenugreek seeds, 1 tbsp mustard seeds, 1 tsp cumin seeds, \u00bd tsp fennel seeds, 1 tsp black peppercorns, 1 cinnamon stick, broken into pieces, 5 cloves and 1 tbsp ground turmeric.<\/p>\n<p>For the lamb madras: 1\u00bd-2kg lamb shoulder, olive oil, for drizzling, 1 green bird&#8217;s-eye chilli, 2 garlic cloves, 1.5cm piece fresh root ginger, peeled, 1 onion, thinly sliced, 12 curry leaves, 3 cardamom pods, 2 bay leaves, 400g tin chopped tomatoes, 200ml beef stock, 2 tsp tamarind juice, 2 tbsp chopped fresh coriander and salt and freshly ground black pepper.<\/p>\n<p>For the chapatis: 325g chapati flour, plus extra for dusting (available in some supermarkets and Asian grocers), 1\u00bd tsp salt and 1 tbsp oil.<\/p>\n<p>For the rice: 200g basmati rice and 1 tbsp coriander leaves.<\/p>\n<p><a href=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2015\/10\/lamb-madress-curry.png\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2015\/10\/lamb-madress-curry.png\" alt=\"\" title=\"lamb madress curry\" width=\"570\" height=\"332\" class=\"aligncenter size-full wp-image-32012\" srcset=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2015\/10\/lamb-madress-curry.png 570w, http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2015\/10\/lamb-madress-curry-300x174.png 300w\" sizes=\"auto, (max-width: 570px) 100vw, 570px\" \/><\/a><\/p>\n<p><script type=\"text\/javascript\"><!--\ngoogle_ad_client = \"ca-pub-0466605792016836\";\n\/* food and drink *\/\ngoogle_ad_slot = \"3648486817\";\ngoogle_ad_width = 300;\ngoogle_ad_height = 250;\n\/\/-->\n<\/script><br \/>\n<script type=\"text\/javascript\"\nsrc=\"http:\/\/pagead2.googlesyndication.com\/pagead\/show_ads.js\">\n<\/script><\/p>\n","protected":false},"excerpt":{"rendered":"James Martin&#8217;s lamb curry with coriander rice and chapatis for food heaven on Saturday Kitchen.
