This cheesecake is a triumph and I\u2019m now happy to adopt these northern green berries in my cooking.&#8221;<\/p>\n<p>The ingredients for the oat biscuit base: 80g rye flour, 100g wholemeal flour, 80g unsalted butter, 2g bicarbonate of soda, 40g caster sugar, 3g salt, 95g jumbo oats and 1 free-range egg, beaten.<\/p>\n<p>For the filling: 300g cream cheese, 130g cr\u00e8me fra\u00eeche, 1 tbsp vanilla pur\u00e9e or good-quality vanilla extract, \u00bc lemon, juice only, plus an extra drop for the egg whites, 2 gelatine leaves, 100g caster sugar and 4 medium egg whites.<\/p>\n<p>For the gooseberry jelly: 200g green gooseberries (such as Invicta), washed, stalks removed and cut in half, 10g caster sugar and 2\u00bc gelatine leaves, softened in water then drained.<\/p>\n<p>For the topping: about 10\u201312 firm green gooseberries, stalks removed.<\/p>\n<p>For the gooseberry comp\u00f4te: 500g red gooseberries (such as Hinnomaki), trimmed 50g caster sugar (optional).<\/p>\n<p><a href=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2015\/03\/cheese-cake.png\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2015\/03\/cheese-cake.png\" alt=\"\" title=\"cheese cake\" width=\"570\" height=\"310\" class=\"aligncenter size-full wp-image-26484\" srcset=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2015\/03\/cheese-cake.png 570w, http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2015\/03\/cheese-cake-300x163.png 300w, http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2015\/03\/cheese-cake-200x110.png 200w\" sizes=\"auto, (max-width: 570px) 100vw, 570px\" \/><\/a><\/p>\n<p><script type=\"text\/javascript\"><!--\ngoogle_ad_client = \"ca-pub-0466605792016836\";\n\/* food and drink *\/\ngoogle_ad_slot = \"3648486817\";\ngoogle_ad_width = 300;\ngoogle_ad_height = 250;\n\/\/-->\n<\/script><br \/>\n<script type=\"text\/javascript\"\nsrc=\"http:\/\/pagead2.googlesyndication.com\/pagead\/show_ads.js\">\n<\/script><\/p>\n","protected":false},"excerpt":{"rendered":"Raymond Blanc served up a delicious green gooseberry jelly cheesecake with red gooseberry comp\u00f4te on Kew on a Plate.
