All you need is a juniper branch and a little courage!&#8221;<\/p>\n<p>The ingredients are:<\/p>\n<p>For the curing mix: 100g brown sugar and pinch salt.<\/p>\n<p>For the smoked cod: 600g piece of cod, skin on, boned and 1 short length of juniper branch.<\/p>\n<p>For the apple and frisee salad: \u00bd head fris\u00e9e lettuce, use only the light green and white parts, chopped<br \/>\n1 apple, sliced, \u00bd fennel, sliced, 2 tbsp picked dill, 3 tbsp heavy cream and salt, to taste.<\/p>\n<p>For the potato salad: 400g new potatoes, halved, \u00bd cucumber, 2 tbsp capers, 3 tbsp sour cream, 100g\/3\u00bdoz mayonnaise and 1 tbsp red wine vinegar.<\/p>\n<p>For the anchovy mustard dipping sauce: 100g sugar, 100ml vinegar, 1 tbsp mustard seeds, \u00bd tbsp caraway seeds, \u00bd tbsp dill seeds and 150ml oil from a jar of anchovies.<\/p>\n<p><a href=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2015\/02\/cod-lion.png\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2015\/02\/cod-lion.png\" alt=\"\" title=\"cod lion\" width=\"580\" height=\"330\" class=\"aligncenter size-full wp-image-25731\" srcset=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2015\/02\/cod-lion.png 580w, http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2015\/02\/cod-lion-300x170.png 300w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/a><br \/>\n<script type=\"text\/javascript\"><!--\ngoogle_ad_client = \"ca-pub-0466605792016836\";\n\/* food and drink *\/\ngoogle_ad_slot = \"3648486817\";\ngoogle_ad_width = 300;\ngoogle_ad_height = 250;\n\/\/-->\n<\/script><br \/>\n<script type=\"text\/javascript\"\nsrc=\"http:\/\/pagead2.googlesyndication.com\/pagead\/show_ads.js\">\n<\/script><\/p>\n","protected":false},"excerpt":{"rendered":"Niklas Ekstedt serves up smoked cod with salad and anchovy dipping sauce on Saturday Kitchen.
