Hudson serves up hot and smoky vindaloo curry made with pork belly on Jamie and Jimmy&#8217;s Friday Night Feast.<\/p>\n<p>However, before Jamie gets down to cooking his spicy dish, he consults one of the world\u2019s greatest Goan chefs, Rego Urbano, who\u2019s cooked for everyone from the Beatles to Bill Gates.<\/p>\n<p>Jamie says: &#8220;I\u2019ve loved eating vindaloo ever since I was a kid, but beware: it\u2019s not for the faint-hearted!&#8221;<\/p>\n<p>The ingredients are: 2 heaped teaspoons coriander seeds, 1 teaspoon cumin seeds, 1 heaped teaspoon black peppercorns, 2 dried Kashmiri chillies, 1 thumb-sized piece of fresh ginger, 6 cloves of garlic, 1 teaspoon turmeric, 1 tablespoon olive oil, 1 tablespoon cider vinegar, 1 kg higher-welfare pork belly, skin removed, sea salt, 3 small onions, 1 handful fresh curry leaves,1 fresh red chilli, 1 fresh yellow chilli, 1 tablespoon tamarind paste and 1 heaped tablespoon soft brown sugar, 1 cinnamon stick, 4 cloves and olive
