They feed on shoots, buds and seeds of small shrubs and herbs. <\/p>\n<p>James says: &#8220;Rich, tasty grouse is served with blackberry sauce and the earthy flavours of beetroot, celeriac and kale.&#8221;<\/p>\n<p>The ingredients are: For the red cabbage pur\u00e9e, 75g butter, 600g red cabbage, thinly sliced, 280ml red wine, 50g soft brown sugar, 2 star anise, \u00bd cinnamon stick, 5 tbsp redcurrant jelly, 2 tbsp red wine vinegar, sea salt and freshly ground black pepper.<\/p>\n<p>For the roasted grouse and blackberry sauce: 1 tbsp olive oil, 2 grouse, cleaned, 50g butter, 1 shallot, thinly sliced, 1 garlic clove, 5 sprigs thyme, leaves picked, 2 juniper berries, crushed, \u00bd fresh bay leaf, 1 tbsp caster sugar, 100ml ruby port, 150ml chicken stock and 150g blackberries.<\/p>\n<p>For the celeriac and baby beetroots: 2 tbsp olive oil, 50g butter, 1 large celeriac, diced and 1 bunch baby beetroots.<\/p>\n<p>For the kale: 50g unsalted butter and 1 head kale, leaves removed and roughly chopped.<\/p>\n<p><a href=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2014\/11\/roasted-grouse.png\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2014\/11\/roasted-grouse.png\" alt=\"\" title=\"roasted grouse\" width=\"570\" height=\"302\" class=\"aligncenter size-full wp-image-20966\" srcset=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2014\/11\/roasted-grouse.png 570w, http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2014\/11\/roasted-grouse-300x158.png 300w\" sizes=\"auto, (max-width: 570px) 100vw, 570px\" \/><\/a><\/p>\n<p><script type=\"text\/javascript\"><!--\ngoogle_ad_client = \"ca-pub-0466605792016836\";\n\/* food and drink *\/\ngoogle_ad_slot = \"3648486817\";\ngoogle_ad_width = 300;\ngoogle_ad_height = 250;\n\/\/-->\n<\/script><br \/>\n<script type=\"text\/javascript\"\nsrc=\"http:\/\/pagead2.googlesyndication.com\/pagead\/show_ads.js\">\n<\/script><\/p>\n","protected":false},"excerpt":{"rendered":"James Martin makes Roasted grouse with red cabbage pur\u00e9e, celeriac, kale and blackberry sauce on Saturday Kitchen.
